Strawberry and Blueberry Yogurt Smoothie Popsicles

These layered Strawberry and Blueberry Yogurt Smoothie Popsicles offer a fruity, creamy frozen treat combining fresh or frozen berries with sweetened yogurt. The distinct layers showcase the bright flavors of strawberries and blueberries with a touch of lemon juice, making them refreshing and visually appealing.

Description

The recipe uses two layers: one strawberry-based and one blueberry-based. Each combines fruit, yogurt, sugar, and lemon juice blended smooth, then poured into popsicle molds in sequence. The lemon juice enhances the berry flavors and adds brightness.

After filling the molds with the layers and inserting sticks, freezing for at least four hours solidifies them into sturdy popsicles. Running the molds under warm water helps release the popsicles cleanly. Wrapping individually before storage maintains their quality.

These popsicles serve as a wholesome frozen snack or dessert, using yogurt to add creaminess and a slight tang balancing the sweet fruit. The ingredient flexibility allows fresh or frozen fruit and any complementary flavored sweetened yogurt. Adding liquid as needed helps blend frozen fruit smoothly.

Notes

  • If blending frozen fruit is difficult, add water, milk, or juice by teaspoon increments to aid mixing.
  • Vanilla flavored yogurt was used here, but any complementary sweetened yogurt works.
  • If you lack a popsicle mold, consider purchasing a standard mold designed for homemade popsicles.
  • Individually wrap popsicles before freezing for easier storage and to prevent freezer burn.
