This Strawberry stuffed French toast will take your breakfast and brunch to the next level! A twist on the classic French toast that is stuffed with a sweet strawberry cheesecake filling. A breakfast the whole family will love.

Ingredients
Strawberry Filling
- 1 cup strawberries
- 4 ounces cream cheese (room temperature (½ brick))
- 2 tablespoon icing sugar
- ½ teaspoon vanilla
French Toast Batter
- 4 eggs
- ½ cup milk
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
French Toast
- 8 slices thick brioche or French bread
- 2 tablespoon butter
Garnish
- 4 strawberries (sliced)
- 4 tablespoon Whipped Cream
- 4 tablespoon maple syrup

Instructions
- Wash and dry the 1 cup strawberries. Remove the stems. Cut the strawberries into small bite sized pieces and set aside.
- In a small bowl combine the 4 ounces cream cheese, 2 tablespoon icing sugar and ½ teaspoon vanilla. Mix until evenly combined. Gently stir in the diced strawberries.
- In a shallow bowl combine the 4 eggs, ½ cup milk, 1 teaspoon vanilla extract, and ½ teaspoon cinnamon. Whisk until evenly combined.
- To assemble the sandwiches first evenly distribute the strawberry filling mixture onto 4 slices of the bread. Spread the filling on the center of the bread, leaving a border over the crust.
- Place a second piece of bread on top and press the crusts together to seal.
- In a frying pan or skillet on medium heat melt the 2 tablespoon butter. When the butter is fully melted carefully dip each French toast into the egg mixture. Allow the excess to drip off then place the sandwich into the pan and cook on each side for about 2-3 minutes or until golden brown.
- Serve with additional sliced strawberries on top, whipped cream and maple syrup! Enjoy.
