Strawberry Marshmallow Fudge

Strawberry Marshmallow Fudge blends melted semi-sweet chocolate and Nutella with mini fruit-flavored marshmallows, dried strawberries, and cocoa crisped rice cereal to create a creamy, chewy confection. It is set in a pan with an initial marshmallow base and chilled until firm before slicing into squares. Optional festive sprinkles add a playful touch.

Description

The fudge starts by lining a pan with parchment and placing 1 cup of mini fruit-flavored marshmallows on the bottom. Semi-sweet and milk chocolate chips are melted with Nutella in the microwave until smooth. The remaining marshmallows, dried chopped strawberries, and cocoa crisped rice cereal are stirred into this melted mixture.

This chocolate mixture is then poured over the base marshmallows in the pan and spread evenly. Optionally, sprinkles can be added on top before chilling the fudge in the refrigerator for about two hours, allowing it to firm up enough for cutting into neat squares.

The result is a sweet treat that combines smooth chocolate richness, chewy marshmallow pockets, fruity strawberry pieces, and a crunchy texture from the cereal, offering a multi-textured and visually appealing dessert.

Ingredients

  • 2 ½ cups marshmallows divided, mini fruit-flavored, brand example: Campfire
  • 12 ounces chocolate chips semi-sweet
  • 11 ½ ounces milk chocolate chips
  • ½ cup Nutella
  • ½ cup cocoa crisped rice cereal
  • ½ cup strawberries roughly chopped, dried
  • Sprinkles optional, festive

Instructions

  1. Line an 8-inch baking dish with parchment paper. Add 1 cup Campfire® mini fruit-flavored marshmallows into bottom of the prepared baking dish.
  2. In a large microwave-safe bowl, combine the chocolate chips and Nutella. Microwave for 30 seconds and stir to combine. Continue cooking fudge in 30 second increments until the mixture in smooth.
  3. Stir in the remaining marshmallows, cocoa crisped rice cereal and dried strawberries.
  4. Pour melted chocolate and Nutella mixture over the marshmallows in the baking dish. If desired, add festive sprinkles evenly over the fudge. Place fudge into the refrigerator until firm, about 2 hours. Cut into 1-inch squares.
