Description

This recipe creates layered popsicles by blending hulled strawberries, half a banana, almond milk, and maple syrup, poured into moulds. After partially freezing, a peach mixture blended with the remaining banana, almond milk, and maple syrup is added as a second layer. The popsicles freeze solid and are served with sticks inserted after the initial freeze.

The popsicles balance the tartness of strawberries and the sweetness of peaches with the creamy smoothness from banana and almond milk. Maple syrup adds subtle sweetness without overpowering the fruit flavors. The layered structure provides visual appeal and flavor contrast.

  • 180 g strawberry 6.3 oz, hulled, roughly chopped
  • 2 banana peeled and divided, small
  • 120 ml almond milk 0.5 cup, divided
  • 2 tsp maple syrup divided
  • 180 g peach 6.3 oz, destoned, peeled, roughly chopped

Instructions

  1. Whizz up the strawberries, 1 banana, half the milk ad 1 tsp of maple syrup in a blender and split the mixture evenly between 6 ice lolly moulds.
  2. Rinse out the blender and whiz the peaches and remaining ingredients and pour the mixture into the half-full ice lolly moulds.
  3. Freeze the ice lollies for 1 hr, then take them out and pop in the sticks, before freezing until solid.

Notes

  • The recipe can be simplified by blending all ingredients together for one flavor layer instead of two.
  • Whole milk can be used instead of almond milk for a non-vegan version with creamier texture.
  • This recipe yields six popsicles.
