Strawberry Rolls

Strawberry Rolls are stuffed with fresh strawberries and lemon-infused jam filling, baked until golden, and smothered with cream cheese icing.

Ingredients

Servings

Dough:

  • 1/3 cup water warm
  • 2 1/4 teaspoon instant yeast 1 package
  • 1 tablespoon white granulated sugar
  • 2 eggs room temperature
  • 1 cup milk lukewarm
  • 1/2 cup white granulated sugar
  • 1/3 cup unsalted butter melted
  • 4 cups all-purpose flour
  • 1 teaspoon salt

Strawberry Filling:

  • 1 cup seedless strawberry jam
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 1/2 cups diced strawberries

Cream Cheese Icing:

  • 8 oz cream cheese room temperature
  • 8 tablespoons unsalted butter softened
  • 2 cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 tablespoon lemon zest
  • 1/8 teaspoon salt

Instructions

Make the dough:

  1. Set aside 4 cups of flour and salt in a large bowl.
  2. Add instant yeast, one tablespoon of sugar, and lukewarm water to a medium bowl and whisk to combine. Let it rest for 5 minutes.
  3. Add the eggs, milk, remaining 1/2 cup sugar, and melted butter to the yeast mixture and whisk until well combined.
  4. Add the yeast mixture to the flour mix, and using a wooden spoon or spatula, stir until well combined.
  5. The dough will be sticky. Cover with plastic wrap and let it rest for 10 minutes, preferably in a warm place.

Make the Filling:

  1. Warm the strawberries in a small saucepan over medium heat, stirring constantly for 4 minutes until the strawberries begin to release juices.
  2. Add the granulated sugar, lemon, lemon zest, and cornstarch, and stir for another 2 minutes. At this point, the mixture will thicken.
  3. Remove from the heat and add the strawberry jam to the mixture. Chill until ready to use; the filling needs to be chilled before being added to the rolls.

Prepare the Rolls:

  1. Preheat oven to 350 F degrees. Place an oven rack in the middle of the oven.
  2. Line a 9x13-inch baking pan with parchment paper and spray it with baking spray.
  3. Flour a flat surface and roll the dough. You will need a good amount of flour. Use it liberally on your hands and rolling pin and sprinkle the dough with some.
  4. Roll the dough until it's about 16 inches long by 13 inches wide and about 1/4 inch thick. The dough should not be very thin, as it won't hold the filling well.
  5. When rolling, make sure the dough doesn't stick to the surface.
  6. Spread the filling over the surface of the dough.
  7. Starting at the long edge, roll the dough down to the bottom edge away from you.
  8. Cut the dough into 12 two-inch slices and place the rolls into the prepared baking pan.
  9. Let the rolls rest for 10 minutes, and let rise a bit.
  10. Place the baking pan in the oven and bake for 20-25 minutes or until golden brown.

Make the Cream Cheese Icing:

  1. Add the cream cheese and butter to a mixing bowl and beat until smooth.
  2. Add the powdered sugar, vanilla extract, and pinch of salt and mix until smooth. Stop to scrape the sides and bottom of the bowl with a spatula.
  3. If the icing is too stiff, add one tablespoon of milk.

Icing the Rolls:

  1. Once the rolls are done baking, remove them from the oven and immediately ice the rolls.
  2. Preferably serve warm with strawberries on the side, but they are also great at room temperature.

Notes

  • For foolproof icing, soften your butter and cream cheese. This way, they incorporate easily and don’t leave lumps in the icing.
  • Feel free to adjust the sweetness of the icing by reducing or adding sugar.
  • Chill the filling BEFORE spreading it onto the dough, or you’ll have a sticky mess on your hands.
  • We love fruit chunks in our filling, but for a shortcut, you can also use lemon-infused jam alone.
