Strawberry Spinach Salad

Nothing says summer like a bright strawberry and spinach salad. The crunch of the leaves mixed with the freshness of the fruit come together to create the perfect lunch on a hot summer's day.

Ingredients
- 10 oz spinach (rinsed)
- 10 large strawberries (rinsed, hulled and sliced)
- 1/4 cup almonds (sliced)
- 1/2 cup feta cheese
- 1/4 cup red onion (thinly sliced)
- 1 grilled avocado (sliced for on top of the salad)
Poppyseed Dressing
- 1 Batch poppy seed dressing
Instructions
- Slice the onions and place them in a bowl of water. Set aside.
- Rinse the spinach and trim off any thick woody stems. Pat dry the spinach.
- Remove the onions from the water and pat dry, add to a large bowl, mix the spinach, strawberries, and feta in and toss gently.
- Prepare the poppy seed dressing as directed and pour over the salad and toss lightly to coat.
- Sprinkle the slivered almonds on top, add your grilled avocado on top and serve.
