Sugar Cookie Bars
Description
This recipe creates sugar cookie bars that combine a tender crumb with a rich buttery flavor. The dough is prepared by first creaming room temperature unsalted butter with granulated sugar until fluffy, which introduces air and softness. Eggs are incorporated one at a time to bind the dough, followed by vanilla extract for depth of flavor. Dry ingredients—flour, fine sea salt, and baking soda—are whisked separately before being gently added to the wet mixture just until blended.
The dough is spread evenly in a half sheet pan before baking at 375°F until the edges are lightly golden and a toothpick inserted comes out clean. Once cooled fully, the bars receive a generous layer of creamy frosting consisting of butter beaten smooth, vanilla, salt, powdered sugar, and milk. Coloring and sprinkles can personalize the bars visually. The bars can then be cut into portions and enjoyed as a classic dessert with soft, tender texture and sweet finishing frosting.
Ingredients
- 1 cup butter room temperature, unsalted
- 2 cups sugar
- 4 egg
- 2 teaspoon vanilla extract pure
- 5 cups flour
- 1 teaspoon salt fine sea salt
- ½ teaspoon baking soda
For the frosting:
- 1 cup butter room temperature, unsalted
- 1 teaspoon vanilla extract pure
- pinch salt
- 4 cups powdered sugar
- 4-5 tablespoon milk
- Food Coloring if desired
- Sprinkles if desired
Instructions
- Preheat oven to 375°F. Grease a half sheet pan (13x18 inches). Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well.
- In a separate bowl, combine flour, salt & soda & stir with a whisk to combine. Add to the wet mixture and mix just until combined. Spread on the prepared baking sheet.
- Bake for 12-17 min, until light golden brown or until a toothpick comes out clean. Cool completely and frost.
Make the frosting:
- In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric hand mixer, beat the butter until smooth. Add vanilla and salt.
- Add powdered sugar in 1-2 cup increments until combined, then add milk & mix until smooth and spreading consistency. If desired, add food coloring.
- Spread over cooled cookie. Top with sprinkles. Cut into bars or triangles and serve.
