  • 4 tsp extra virgin olive oil
  • 2 tbsp Parmesan Cheese grated
  • ¼ cup panko breadcrumbs
  • salt
  • black pepper

Instructions

  1. Preheat broiler on high with the shelf around 10 inches from the heat source.
  2. Cut the zucchini in half lengthwise, then each half into 3 pieces lengthwise (so each zucchini is cut into 6 pieces).
  3. Place zucchini on a tray, drizzle with 2 teaspoons of olive oil, salt, and pepper. Toss then line up on the tray so they are pressed up against each other.
  4. Sprinkle with breadcrumbs first, then parmesan. Drizzle with remaining olive oil then broil for 10 minutes or until golden on top and the zucchini is tender crisp i.e. just cooked.
  5. Serve immediately!
