  • 4.2 oz (120 gr) Hu dark chocolate use my promo code IRYNA15 for 15%
  • 3 tablespoon pureed avocado
  • ¼ teaspoon matcha powder
  • ¼ c cacao powder

Instructions

  1. Break chocolate bar into smaller pieces and place them in a large heat-proof bowl. Set the bowl over a pot filled with 2 inches of simmering water. Stir until chocolate has melted.
  2. Mash the avocado making sure to break small lumps. The best way to do this is to push scooped avocado through a fine metal strainer.
  3. Turn off the heat and place the bowl on a counter. Add avocado and Matcha powder and stir to combine. The mixture will harden.
  4. Cover the bowl with a plastic wrap and chill for 30 minutes.
  5. Using your hands roll the mixture into small balls and coat them with cacao powder. Enjoy!

Notes

  • Puree the avocado thoroughly. Make sure to mash the avocado thoroughly, breaking down any small lumps. This will guarantee a creamy and consistent texture throughout your vegan chocolate truffles.
  • Chill before shaping. This will make the mixture easier to handle, and the truffles will hold their shape better.
  • Adding coconut. Instead of using cacao powder for coating, use shredded coconut or finely chopped nuts like almonds or peanuts. 
  • Adding caramel. Add a dollop inside each truffle before rolling them. The caramel adds a delightful surprise and a burst of sweetness to the truffles.
  • Adding sea salt. For a sophisticated twist, sprinkle a tiny bit of sea salt on top of your truffles. 
  • Try with peanut butter. For a nutty twist to your vegan truffles, consider adding some peanut butter to the mixture.
  • Refrigeration. Place leftover truffles in an airtight container separated with parchment paper to prevent them from sticking together. Store them in the refrigerator for up to five days. When you're ready to enjoy them, just take them out of the fridge and let them sit at room temperature for a few minutes to soften a bit.
  • Freezing. I don’t recommend storing them in the freezer since the pureed avocado and chocolate mixture can become grainy when frozen and thawed, which can affect the smooth texture of your truffles.
