Ingredients
- 2 pounds boneless, skinless chicken thighs cut into 1 inch pieces
- 5 Tablespoons honey
- 2 1/2 Tablespoons avocado oil
- 4 1/2 Tablespoons soy sauce
- 1 1/2 Tablespoons freshly squeezed lime juice
- 3 garlic cloves minced
- 1/2 teaspoon cornstarch
- 1 Tablespoon Sriracha
- 1 Tablespoon minced ginger
- salt and pepper to taste
- 1/2 Tablespoon paprika
- 2 Tablespoons cilantro chopped
Instructions
- In a small bowl, combine the honey, avocado oil, lime juice, soy sauce, minced garlic, cornstarch, sriracha, minced ginger, and salt and pepper to taste. Stir to combine.
- Place the chicken pieces into a separate medium sized bowl and sprinkle with the paprika, tossing until evenly coated. Pour half of the prepared marinade over the chicken and stir. Allow the chicken to marinate for at least one hour, covered in the refrigerator. Set aside the remainder of the sauce to use for glazing the skewers and for serving.
- When ready to grill, thread the chicken onto skewers and discard any remaining sauce from the bowl.
- Preheat your grill to medium heat and grease the grill grates. Cook the chicken skewers for 12-15 minutes, turning every 3-4 minutes or until chicken is no longer pink in the center. Brush with some of the remaining sauce during cooking.
- Transfer the skewers to a serving dish and sprinkle with chopped cilantro. Serve with remaining sauce on the side for dipping, if desired.
Notes
- Add some veggies. Vegetables like mushrooms, bell peppers, onions, and cherry tomatoes would all work great added onto your chicken skewers.
- Using wooden skewers? Don't forget to soak them! If you're using wooden bamboo skewers, you need to soak them in water for 20-30 minutes before grilling to prevent them from burning.
- No grill? No problem. You can easily make your sweet and spicy chicken using a grill pan on the stove, or you can bake them in the oven. See oven instructions below.
- Store leftovers in an airtight container in the fridge for up to four days.
