Who hasn't heard of the famous Czech kolache or buchty, iconic pastries with sweet fillings? I would like to introduce a lesser-known filling made with fresh white cabbage—a fantastic vintage Czech recipe that is nearly forgotten today.

  • 1 pound fresh cabbage white or green
  • tick unsalted butter
  • ½ cup granulated sugar
  • ¼ cup heavy cream
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon ground cinnamon

Instructions

  1. Remove the wilted outer leaves from 1 pound fresh cabbage and cut out the tough stem. Finely chop the cabbage, preferably with a large chef's knife.
  2. In a small saucepan, melt ⅔ stick unsalted butter over medium heat and mix it with ¼ cup heavy cream. Transfer the chopped cabbage to a baking dish. Add ½ cup granulated sugar, 1 teaspoon ground cinnamon, ¼ teaspoon ground black pepper, and ¼ teaspoon salt. Pour in the melted butter mixture and stir until everything is thoroughly combined.
  3. Place the dish in an oven preheated to 350 °F and bake for about one hour. During baking, the cabbage will release water, which should almost evaporate by the end. Stir occasionally to prevent burning. The filling is done when it has a golden brown color.
