Sweet Potato Chowder with Brisket

Ingredients

  • 2 teaspoons olive oil
  • 1 tablespoon unsalted butter
  • 2 large leeks halved and thinly sliced (light green and white part only)
  • 2 pounds sweet potatoes peeled and diced
  • 1 ½ teaspoon smoked paprika
  • 5 cups low-sodium beef broth
  • Salt and freshly ground pepper to taste
  • 3 cups frozen corn
  • cup heavy cream
  • 1 pound smoked beef Brisket shredded
  • chives for garnishing

Instructions

  1. Heat the oil and butter in a large Dutch Oven, over medium heat, until the butter has melted. Add leeks and cook until softened and beginning to caramelize, about 5 minutes.
  2. Stir in the diced sweet potatoes and sauté for a minute or two. Then, add the smoked paprika and sauté for a few seconds to release its aromas.
  3. Pour in the beef broth and add a small pinch of salt and pepper. Bring to a boil, then lower the heat to a simmer and cook until the sweet potatoes are tender, about 15 - 20 minutes.
  4. Add the frozen corn and cook until thawed, about 5 minutes.
  5. Transfer about half of the soup into a blender and blend until smooth. Return to the pot. If desired, you can mash the remaining potato mixture in the pot for a chunky consistency.
  6. Pour in the heavy cream and cook until the chowder thickens to the desired consistency, 5 to 10 minutes. Then, add most of the shredded brisket - reserving some to use as a garnish - and cook until heated through, about 3-4 minutes.
  7. Taste and adjust seasoning as needed.
  8. Ladle the soup into bowls and garnish with the reserved brisket and with some chopped chives.
  9. Serve immediately!
