Description

This Sweet Potato Latte recipe starts by cooking a sweet potato until soft by roasting, air frying, steaming, or boiling. Once cooked, the sweet potato is peeled and pureed to about half a cup. The puree is then blended with milk, maple syrup (or a preferred sweetener), vanilla extract, and a pinch of ground cinnamon until smooth.

The mixture is gently heated on the stove over medium-low heat until warmed through, stirring frequently to prevent sticking or burning. The resulting latte is creamy and naturally sweetened, with a subtle hint of spice from cinnamon and depth from vanilla.

  • 1 sweet potato approx 200g/7oz
  • 2 cups milk or non-dairy milk, 480ml
  • 1 tablespoons maple syrup or honey, sugar or agave.
  • ¼ teaspoon vanilla extract
  • ground cinnamon small pinch

Instructions

  1. Roast, air fry, steam, or boil the sweet potato until soft.
  2. Peel the sweet potato, cut it into cubes and:Roast: Drizzle with a little oil and roast on a baking sheet and roast at 400°F/200°C for 25-30 minutes.Air Fry: Place into an air fryer basket, spray with a little oil and cook at 400°F/200°C for 10-15 minutes, tossing occassionally, or until soft.Steam: Place cubed sweet potato into a steamer over a pan of boiling water, add a lid and steam for 8-10 minutes or until soft.Boil: Place cubes of sweet potato into a large pot of boiling water and boil for 8 minutes or until soft. Drain well.
  3. Puree the cooked sweet potato in a blender or with a hand-held immersion blender. You should have about ½ cup of sweet potato puree.
  4. Add the sweet potato puree and all remaining ingredients and blend until smooth.
  5. Pour the mixture into a pot and heat over medium/low heat for a few minutes, stirring often, until warmed through.
  6. Serve with a sprinkle of cinnamon. If desired, add a little frothed milk.
