Sweet Potato Rounds with Goat Cheese

Sweet Potato Rounds with Goat Cheese involve oven-baked sweet potato slices seasoned with cinnamon, sugar, salt, and olive oil. Topped with a smooth mixture of goat cheese, cream, and honey, then garnished with candied pecans, dried cranberries, and a drizzle of honey, this dish balances sweet and savory elements with varied textures.

Description

This recipe starts by slicing peeled sweet potatoes into half-inch rounds, then brushing each side with olive oil and sprinkling them with sea salt, cinnamon, and sugar. Baking at 400°F for 15 minutes per side softens the rounds, caramelizing their edges.

While baking, a creamy goat cheese topping is prepared by blending goat cheese, cream (or half and half), and honey, creating a smooth, mildly sweet spread. Once the rounds are baked and slightly cooled, a teaspoon of the goat cheese mixture is added to each slice. These are then topped with chopped candied pecans and dried cranberries which add crunch and tang.

The final touch is a light honey drizzle, bringing extra sweetness to complement the spices and goat cheese. This dish delivers a combination of soft, creamy, crunchy, and sweet textures and flavors suitable as an appetizer, snack, or side.
