Description

This Sweet Potato Turkey Chili starts by browning ground turkey with olive oil and optionally sriracha for mild heat. Meanwhile, sweet potatoes are peeled and diced along with onions and bell peppers. In a crockpot set to high, these vegetables are layered with cooked turkey, black beans, diced tomatoes, tomato sauce and paste, beef broth, and a generous amount of chili powder and spices. The chili simmers for about four hours, allowing flavors to meld and vegetables to soften thoroughly.

The chili's flavor profile blends the sweetness and texture of sweet potatoes with savory turkey and an earthy chili seasoning. The inclusion of beans adds heartiness and fiber, while tomato-based ingredients create a thick, saucy consistency.   • 6 ½ cup sweet potato ~2 medium sweet potatoes, cubed
  • 1 lbs ground turkey 93% lean
  • 2 cups white onion diced
  • 1 red pepper diced
  • 1 orange bell pepper
  • 1 can black beans 15oz
  • 3-5 tbsp chili powder depending on taste
  • 1 can tomato sauce 15oz
  • 6 oz tomato paste
  • 28 oz diced tomatoes
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup beef broth or sub water
  • 1 tbsp olive oil
  • 1 tsp cayenne pepper to taste, optional

Instructions

  1. Heat a stove top skillet to medium heat. Add olive oil to pan (or cooking spray), add in ground turkey. Cook for 5-8 minutes until turkey is 90% cooked. Remove from heat and stir in sriracha (optional).
  2. Peel sweet potatoes and dice. Chop white onions, red pepper, and the orange pepper. Drain and rinse black beans.
  3. Set the crock pot / slow cooker to High heat. Layer in chopped vegetables (onion, peppers, sweet potatoes), then sprinkle in cooked ground turkey, black beans, and canned tomatoes.
  4. Add in tomato sauce, tomato paste, and broth. Fold together. Season with chili powder, salt, and pepper.
  5. Set crockpot for 4 hours. Stir every hour or so. Ensure all vegetables are completely saturated in chili sauce for even cooking.
  6. Serve hot & top with crackers, cheese (crumbles of feta / colby jack), greek yogurt, sour cream, or chives. Enjoy!
