Description
This Taro Milk Tea recipe begins with preparing tapioca pearls according to package instructions, then simmering them in a homemade brown sugar syrup made with muscovado sugar and water to infuse the pearls with rich sweetness. Separately, green tea is steeped and set aside.
The taro component is created by blending taro powder with milk (or a milk-water mix) until smooth and creamy. In a serving cup, brown sugar syrup with pearls is added first, followed by ice, then the blended taro milk, and topped off with green tea. The layers are mixed before drinking, offering a balance of textures and flavors: the soft, sweet pearls, the creamy taro, and the slightly bitter green tea.
For those using real taro root instead of powder, cubed taro is peeled and boiled until tender, then blended with condensed milk and milk to create the taro mixture before combining with tea and pearls, providing a more natural taro flavor.
Ingredients
Brown Sugar Boba Pearl Syrup
- ½ cup tapioca pearls
- ¼ cup muscovado sugar or dark brown sugar
- 50 ml water cold
Taro Boba
- ½ cup green tea
- 2 to 3 tbsp taro powder
- 1½ cup milk
Instructions
Brown Sugar Boba Pearl Syrup
- Prepare your tapioca pearls according to the package.
- In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
- Remove from heat once it has thickened.
Taro Boba
- Steep the green tea and set aside.
- In a blender, combine the taro powder and milk (or 50/50 milk and cold filtered water). Blend until fully combined.
- In a cup, add in half of the brown sugar syrup with the pearls. Add in the ice cubes.
- Add the blended taro powder and milk to the cup. Top off with green tea.
- Mix until everything has combined.
Notes
- If using real taro root, peel and cube 150-200 grams, boil until fork-tender, then blend with condensed milk and milk for a fresh taro mixture.
- Simmer cooked tapioca pearls in brown sugar syrup to enhance sweetness and flavor before assembling the drink.
- Combine the layers in order: brown sugar pearls, ice, blended taro milk, and green tea, then mix before drinking.
