Tex Mex Spinach Rolls

  • 2 crescent dough refrigerated, packages
  • 8 oz cream cheese
  • 1 ½ cups Monterey jack cheese shredded
  • 2 cups spinach chopped
  • ½ teaspoon taco seasoning
  • ½ cup Pico de Gallo drained well
  • 1 egg
  • 1 tbsp water

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, using a spatula, combine the spinach, cream cheese and monterey jack cheese. Stir in the taco seasoning, and well-drained pico de gallo.
  3. Unroll the crescent dough and lay flat.
  4. Spoon a heaping tbsp of the spinach mixture onto the wider end of each triangle of dough & then roll up.
  5. Place all the spinach rolls on a baking sheet lined with parchment paper.
  6. In a small bowl combine egg and water, and whisk well with a fork.
  7. Brush egg wash on the tops of the crescents.
  8. Bake 15-20 minutes or until the top of the crescent rolls are golden brown and the cheese is melted
  9. Serve immediately.
