Thai Larb Gai (Chicken Lettuce Wraps)

Larb gai is a mouthwatering Thai chicken lettuce wrap made with a juicy chicken and herb filling tossed in a spicy lime dressing.

Ingredients

  • 1 lb ground chicken
  • 1/2 tsp kosher salt
  • 2 shallots sliced thin
  • 4 green onions sliced thin
  • 1/2 cup cilantro chopped
  • 1/4 cup fresh mint
  • 1/4 cup Thai basil
  • 1 tbsp red chili flakes
  • 1 tbsp palm sugar (or brown sugar)
  • 1 tbsp fish sauce
  • 4 limes juiced
  • 3 tbsp Thai sticky rice raw, uncooked
  • Romaine lettuce leaves for serving

Instructions

  1. Prepare and slice the shallots, green onion and cilantro. Pluck the mint and basil leaves and add to veg. Set aside in a bowl.
  2. In a small bowl mix together the dressing ingredients of red chili flakes, palm sugar, fish sauce and lime juice. Stir to dissolve sugar and set aside.
  3. In a dry skillet over medium heat toast the rice until golden brown, about 8 minutes. Grind to a powder in spice grinder or use a mortar and pestle. Set aside.
  4. Over medium heat cook the ground chicken and season with salt. Transfer to a serving bowl and top with ground rice, prepared veg and herbs and pour dressing over. Toss to coat, check seasoning and serve with lettuce leaves.
