Description
This recipe starts by simmering white sugar with water, fresh lime leaves, and chopped lemongrass to infuse the syrup with herbal and citrusy aromas. After steeping and straining, the syrup cools before being mixed with cold water, ice, and freshly squeezed lime juice. The limeade is served over ice and garnished optionally with lime wheels for added brightness and visual appeal.
The resulting drink is simultaneously sweet and tart with a pronounced fragrant character from the lime leaves and lemongrass. It quenches thirst and assists digestion, often enjoyed alongside Thai or Southeast Asian cuisine but equally suited as a standalone summer beverage.
Storing the limeade in the refrigerator will maintain its freshness for up to five days. For freezing, portion the limeade into ice cube trays to preserve flavor concentrations. After thawing, stir or shake well to recombine any separated ingredients before serving again.
Ingredients
- 1 cup sugar white sugar
- 1 cup water
- 1/3 cup lime leaves about 20 leaves
- 1/4 cup lemongrass chopped stalk
- 1 cup lime juice for me, this was about 7 limes, fresh
- 3 cups water cold water and 1 cup ice
- 3 cups ice cold water and 1 cup ice
- lime optional, wheels, for garnish
Instructions
- Combine the sugar, 1 cup of water, lime leaves, and lemongrass in a saucepan over medium heat. Allow the simple syrup to steep for 10 minutes. Strain the leaves and lemongrass pieces from the liquid. Let it cool for 10 minutes.
- Combine the cooled syrup with 3 cups of cold water and 1 cup of ice. Stir in the lime juice. Serve over ice with lime wheels, if desired.
Notes
- Keep Thai Limeade refrigerated in a sealed container for up to 5 days to maintain freshness.
- Freeze limeade in ice cube trays for convenient, portioned use later.
- If separation occurs after freezing and thawing, stir or shake the limeade well to recombine flavors before serving.
