This Thai peanut chicken salad is anything but your classic chicken salad. A flavorful peanut sauce inspired by the flavors of chicken satay makes it a unique addition to lunch or a fun party appetizer. Yield: 2 cups of chicken salad

Ingredients
- 1/4 cup peanut butter
- 1 karge lime, juiced (roughly 3 Tbsp juice)
- 3 Tbsp water
- 2 tsp hot sauce
- 2 tsp ground ginger
- 1/2 tsp salt
- 2 cups cooked chicken breast, shredded
- 2 Tbsp peanuts, unsalted, roasted
- 1 Tbsp fresh cilantro, chopped

Instructions
- Mix together peanut butter, lime juice, water, hot sauce, ginger, and salt until a thin paste forms.
- In a large bowl combine chicken with peanut sauce, peanuts, and cilantro.
- Serve mixture warm or chilled with pita or other flatbread.
