Thaise groene curry pasta

Snel en makkelijk recept om zelf Thaise groene currypasta te maken. Met verse ingrediënten die te vinden zijn in de meeste supermarkten. Meng alles gewoon door elkaar en het is binnen enkele minuten klaar. Vegan en sojavrij.

  • 2 grote bossen cilantro Bewaar een kwart van de mooie blaadjes, als topping (80 tot 100 gram, fresh (Dutch: verse koriander
  • 2 tot 6 green chili peppers 'normale' pepers
  • 1 tot 2 tel coconut palm sugar
  • 6 lime schil en sap
  • 2 tot 6 Thai green peppers kleine, pittige peppers
  • 4 tot 6 stengels lemongrass
  • 2 tot 3 shallots
  • 4 tengels spring onion aka lente or bosui
  • 8 tenen garlic
  • 4 el verse
  • 2 el galangal of 1 el poeder, verse
  • 1 el ground coriander seed
  • 1 el Turmeric of vers
  • ½ el cumin
  • 2 tot 4 el cucumber juice of water

Instructions

  1. Snij de pepers in kleine stukjes. Rasp of snijd de gember en laos (en kurkuma als je vers hebt).
  2. Snijd het citroengras overlangs open, verwijder de buitenste bladeren en snijd het zachtere middengedeelte in kleine stukjes.
  3. Pers de knoflook, hak de sjalotjes (en/of groene uien) fijn.
  4. Was en rasp de citroen. Knijp het sap eruit.
  5. Voeg alles toe aan de blender en mix. Als het niet werkt, voeg dan een klein beetje vloeistof toe. Dit kan extra limoensap zijn, wat komkommersap of water.
  6. Voeg de koriander in kleine porties toe.
  7. Voeg de droge kruiden toe.

Notes

  • The paste can be kept in the fridge foor 2 maybe 3 days. Freeze the rest into icecubes. One icecube equals a generous tablespoon. I use about 4 icecubes for 2 servings (or 1 large): just let it melt into your sauce.
