The Best 15 Minute Teriyaki Udon

Ingredients

  • 1 tablespoon sesame oil
  • 1 red bell pepper sliced thinly
  • 5 oz sliced shiitake mushrooms
  • 400 grams pre-cooked udon noodles

Teriyaki Sauce

  • ¼ cup + 2 tablespoon soy sauce
  • 2 tablespoons water
  • 3 tablespoons brown sugar
  • ½ tablespoon rice wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon minced ginger
  • 1 tablespoon cornstarch

Instructions

  1. In a large pan or wok, heat the sesame oil over medium-high heat.
  2. Add the red bell pepper and sauté over medium heat to medium high heat for about 2-3 minutes until the pepper starts to get softer. Add the mushrooms and stir fry for about 1-2 minutes. Or longer if you want your mushrooms more on the tender side.
  3. While the vegetables are cooking, in a small bowl combine all the ingredients for the teriyaki sauce. Whisk until well combined. Set aside.
  4. Add pre-cooked udon noodles and stir fry for 1-2 minutes. Add the teriyaki sauce and bring to a simmer. Stir well until the sauce thickens and coats the udon noodles and vegetables. Serve immediately.
