The Best Chocolate Protein Truffles

Creamy, dairy-free, and with dark chocolate flavor. These chocolate protein truffles use vegan protein powder to make an indulgent dessert!

Ingredients

  • 1 cup mini chocolate chips enjoy life
  • ½ cup hemp milk 
  • cup coconut milk
  • cup vegan protein powder
  • ¼ cup vegan protein powder
  • 1 teaspoon vanilla extract
  • For The Coating
  • 2 tbs mini chocolate chips dairy-free
  • 2 tbs crushed candy canes or sprinkles

Instructions

  1. Combine the hemp and coconut milk into a small hot and heat just over medium until it JUST starts to boil.
  2. Remove from heat and pour it over the chocolate chips. Stir until they’re mostly melted. Add in the vanilla and protein powder.
  3. Mix really well until everything is combined and no clumps remain.
  4. Pop the bowl into the fridge and let sit for 2.5 hours.
  5. Remove the bowl and use a trigger ice cream scoop to portion the mixture into truffles. Place the balls on a parchment-lined cutting board and place them into the freezer.
  6. Once ready, melt the 2 tablespoons of chocolate chips in a saucepan on low. Heat until JUST melted.
  7. Remove the truffles from the freezer. Take a large spoon of melted chocolate and drizzle it over the truffles.
  8. Sprinkle any sprinkles or crushed candy canes you're using over top.
  9. Pop the dairy-free truffles back into the fridge to set.

  • Store the truffles in the fridge or freezer. If in the freezer, let them sit at room temperature for 15-30 minutes.
  • Top the protein truffles in crushed candy canes or sprinkles on top of the drizzles chocolate. Switch it up depending on the season!
