  • 2 cloves garlic
  • ginger small piece, fresh
  • 1 tablespoon butter softened
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • Pinch of salt
  • Pinch of black pepper
  • 1 pound carrot Imperator variety
  • parsley chopped

Instructions

  1. Preheat your oven to 425°F. Finely chop the garlic and ginger.
  2. In a small mixing bowl, combine the butter, honey, garlic, ginger, and olive oil. Season with a pinch of salt and pepper.
  3. Toss the baby carrots with the butter-honey mixture and place on a baking tray.
  4. Roast the carrots for 15 minutes, flipping them halfway through. Transfer the caramelized carrots to a plate, and garnish with the chopped parsley.
