- 2 cups chicken broth
- 1 tablespoon vegetable oil
- 2 cloves garlic minced
- ¼ cup onion diced
- 1 jalapeño chopped
- ¼ teaspoon cumin
- ¼ cup tomato sauce
- 1 cup long grain rice
- cilantro to garnish
Instructions
- In a sauce pan add vegetable oil, garlic, onion, jalapeno, cumin, chicken broth, and tomato sauce. Heat over medium high heat and bring to a boil.
- Once the chicken broth mix is boiling add the long grain rice. Reduce heat to a simmer and cook covered for 15 minutes.
- When the rice is done fluff with a spoon or a fork and serve immediately with fresh cilantro.
