Toaster Oven Oatmeal Cookies

These toaster oven oatmeal cookies are just like the Little Debbie kind, but even better because they are homemade and made in the toaster oven!

Ingredients
For cookies:
- ½ cup unsalted butter
- ½ cup brown sugar lacked
- 3 tablespoons granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- 1-½ cup old fashioned rolled oats
- ½ cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ½ teaspoon kosher salt
For filling:
- 1-½ cups powdered sugar
- 3-½ ounce marshmallow creme
- ⅓ cup vegetable shortening
- 1 tablespoons half and half more may be needed
Instructions
For cookies:
- Preheat oven to 350 degrees F and spray a toaster oven sheet pan with non-stick cooking spray or line it with a small piece of parchment paper.
- In a large mixing bowl, with a hand or stand mixer, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
- Add eggs, one at a time, scraping down the bowl until just combined.
- Mix in the vanilla extract.
- In a medium-sized mixing bowl, whisk together oats, flour, baking soda, cinnamon, and kosher salt.
- Mix the dry ingredients with the wet ingredients until just combined. The batter will be thick but should stick together.
- Cook 1-½ inch tablespoon-sized balls onto the cookie sheets, about six per batch.
- Press the cookies down to make them flat before baking.
- Bake for 15 minutes or until brown at the top.
- Toaster oven temperatures vary and the cookies will burn quickly if they are not watched. Check on cookies at the 10 minute mark.
- Continue with batches until the dough has been used up.
- Let cookies completely cool on a wire rack.
For filling:
- With an electric mixer blend until smooth powdered sugar, marshmallow creme, and vegetable shortening.
- Add half and half and blend until smooth and creamy.
- After the cookies are completely cooled pipe or spread filling on one cookie and top with the another cookie.
