Tortellini Soup
Report
Tortellini soup is that easy, quick and filling dinner dish you wish you found earlier. Packed with fresh veggies, sausage and tortellini in every bite.

Ingredients
- 1 tablespoon olive oil
- 1 pound sausage see note
- ½ cup onion diced
- 1 teaspoon basil dried
- 1 teaspoon parsley
- ½ teaspoon oregano
- 2 cloves garlic minced
- ½ cup carrot diced
- ½ cup celery diced
- 15 ounces diced tomatoes one can
- 8 cups chicken broth
- 1 cup kale chopped, packed
- 1 pound tortellini frozen, see note
Instructions
- In a pot or dutch oven, heat olive oil over medium heat.
- Add sausage and cook until almost browned.
- Add herbs and onion and cook until translucent.
- Add garlic and cook until fragrant, about 30 seconds.
- Add carrots, celery, diced tomatoes, and broth.
- Bring to a simmer and simmer for 15 minutes.
- Add kale and tortellini, cook until tortellini is done - about 3 minutes.
- Garnish with fresh parsley and parmesan cheese.

Notes
- You can use ground sausage or kielbasa, either works well and tastes great.
- I usually use frozen tortellini, you can also use fresh but I do not recommend dried.
