Tortilla Pinwheels are flour tortillas that are wrapped around a cheesy mixture loaded with chiles, green onions, black beans, corn, jalapeno peppers, and taco seasoning.

  • 1 block cream cheese room temperature
  • 1 cup Monterey jack cheese shredded, 113 g
  • 1 cup sour cream room temperature
  • 1 can green chile drained, 4 ounces, chopped
  • 1 can whole kernel corn drained
  • 1 medium jalapeno pepper seeded and diced
  • ½ cup black beans rinsed and drained
  • ¼ cup green onion chopped
  • 1 tablespoon taco seasoning
  • 12 flour tortillas 8 inches
  • salsa optional, for dipping

Instructions

  1. In a large bowl, beat the cream cheese, shredded cheese, and sour cream together until well blended.
  2. Stir in the green chiles, corn, jalapeno, black beans, green onion, and taco seasoning.
  3. Divide cream cheese mixture evenly between the tortilla shells and spread out into an even layer. Roll each tortilla up tightly.
  4. Place the rolled-up tortillas in a baking dish and cover with plastic wrap. Refrigerate at least 2 hours, up to overnight.
  5. When ready, unwrap the tortillas and cut them into ¾-inch pieces. Serve with salsa (optional).
