- ¾ cup (6 fl oz/170 ml) sherry
- 2 tablespoons water
- 2 ½ teaspoons (8 g/1 sachet) powdered gelatin
- 1 ¼ cups (10 fl oz/300 ml) water
- ¼ cup (2 oz/ 58 g) granulated sugar
- 1 ⅔ cups (8 oz/225 g) fresh raspberries, roughly mashed
- 1 recipe creme anglasie
- 1 ½ cups (12 fl oz/360 ml) heavy whipping cream
- 1 tablespoon Sprinkles
