Triple Berry Crepes

Triple Berry Crepes are a breeze to make and look so elegant! Loaded with your favorite berries and a lemon curd whipped cream.

Ingredients

  • 2 cups flour
  • 3 egg
  • 1 tablespoon vegetable oil
  • 2 cups milk 1% or 2%
  • pinch salt
  • 2 cups whipping cream
  • ¼ cup powdered sugar
  • ½ cup lemon curd I used store brand
  • 3 cups strawberries raspberries and blueberries, fresh, measured in cups

Instructions

  1. In a blender combine the milk, eggs, oil and salt and mix well then add in the flour; process until smooth. Let sit on counter for 30 minutes
  2. Over medium heat, heat skillet until hot.
  3. Place 1/3 cup of batter in skillet and swirl until bottom is coated
  4. Cook for about 1 1/2 to 2 minutes on each side until light brown
  5. Remove and make remaining batter
  6. Whip the whipped cream with the powered sugar until stiff peaks form
  7. 'Remove about 1 cup and then add the lemon curd to the remaining cream
  8. To assemble - place about 3 tablespoons of whipped cream with curd down the center
  9. Place berries (about 8 blueberries, 4 raspberries and 2 strawberries that have been sliced) on top and then roll up.
  10. Top with additional berries and reserved whipped cream
