Triple Chocolate Chip Cookies
Description
Triple Chocolate Chip Cookies are made by creaming soft butter with light brown and white sugars, then mixing in melted dark chocolate to infuse concentrated cocoa flavor directly into the batter. Vanilla extract and an egg bind the dough, which is combined with a sifted mix of flour, cocoa powder, baking soda, and salt to provide structure and balance bitterness.
The addition of dark chocolate chips increases the chocolate intensity and texture. The dough is portioned into balls without flattening to preserve a slightly thick shape during baking at a moderate temperature. Cookies bake for around 18 minutes until a skewer comes out mostly clean, indicating a soft but set center.
The result is a cookie with a tender but slightly firm texture on the outside while retaining melt-in-the-mouth chocolate richness from multiple cocoa sources. Cooling on a rack ensures they finish setting for ideal texture.
Ingredients
- 125 g dark chocolate minimum 70% cocoa solids, brand example Dr Oetker's
- 150 g plain flour 1 cup
- 30 g cocoa powder sieved
- 1 tsp sodium bicarbonate baking soda
- ½ tsp salt
- 125 g butter soft
- 50 g light brown sugar soft
- 50 g white sugar
- 1 tsp vanilla extract
- 1 egg cold
- 270 g dark chocolate chips I used Dr Oetker's
Instructions
- Preheat the oven to fan assisted 150C / 170C / 325F / gas 3.
- Line your baking tray.
- Melt the dark chocolate in the microwave.
- Mix together the flour, cocoa powder, sodium bicarbonate and salt in a bowl and set aside.
- In another bowl, cream together the butter and sugars and when done mix in the melted chocolate, then the vanilla extract and the egg.
- Then stir in the dry ingredients followed by the chocolate chips.
- Drop 12 equal-sized balls of cookie dough onto your baking tray making sure to leave at least 6 cm between each one. Don't flatten the cookie mix.
- Bake for about 18 minutes, until a skewer inserted into a cookie comes out semi-clean.
- Let cookies cool for a few minutes 4-5 minutes, then transfer them to a cooling rack
