Vanilla Fig Oatmeal with Pistachios and Honey

Vanilla Fig Oatmeal

  • 1/2 cup gluten-free rolled oats
  • 1 cup unsweetened almond milk
  • 1 fresh fig, diced
  • 1/4 teaspoon ground cinnamon
  • pinch of salt
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract

Greek Yogurt, Pistachio and Honey Topping

  • 1/4 cup plain greek yogurt
  • 1 teaspoon honey
  • 1/8 teaspoon vanilla extract
  • 1 tablespoon pistachios
  • 1 fresh fig, sliced or diced

Instructions

  1. In a small saucepan over medium heat bring the milk to a simmer.
  2. When the milk starts to simmer stir in the oats, cinnamon and pinch of salt.
  3. Turn the heat to medium-low and let the oats cook for a minute.
  4. Add in the diced fig and honey and stir again.
  5. Cook the oats until most of the milk is absorbed, 4-5 minutes, stirring occasionally.
  6. Turn the heat off, stir in the vanilla extract and cover the saucepan with a lid for a couple minutes while you prepare the topping.

Greek Yogurt, Pistachio and Honey Topping

  1. In a small bowl whisk together the Greek yogurt, honey and vanilla.
  2. Pour the oatmeal into a bowl and swirl in the Greek yogurt.
  3. Top with the chopped pistachio, fig and more honey.
