Vegan Almond Flour Cookies

These Vegan Almond Flour Cookies are an absolute delight! What’s best is that these gluten-free cookies are made using just 5 ingredients. The sweet hint of ripe banana and the unexpected zing of lemon juice all come together to create a cookie that is not just delicious but also has a delightful texture.

  • 3 c blanched almond flour
  • 3 tablespoon maple syrup
  • 1 ripe banana
  • 1 c powdered sugar
  • 2 tablespoon lemon or lime juice

Instructions

  1. Add your banana to a medium bowl and mash it with a fork. Stir in Maple syrup and almond flour. Mix everything nicely until all ingredients are incorporated, and shape your cookie dough into a ball. Wrap a ball in a plastic wrap and place it in the freezer for 30 minutes.
  2. Preheat the oven to 345 F and line a baking sheet with a parchment paper.
  3. Remove the dough from the freezer, place it in between 2 sheets of parchment paper, and roll it out to ⅛-inch. thickness. Using a cookie cutter of your choice cut out cookies. Place cookies on a baking sheet and bake for 12 - 15 minutes or until the edges start to brown. between
  4. Meanwhile, in a small bowl whisk together powdered sugar and lemon juice. 
  5. Remove cookies from the oven, transfer to a wire rack and let them cool for 10 minutes. After that, using a pastry brush cover the top of the cookies with a sugar-lemon glaze. Alternatively, you can directly dip each cookie into the bowl with a glaze. Let the glaze dry and enjoy!

Notes

  • Sweetness. This recipe contains only 3 tablespoons of Maple syrup, so the cookies will only be slightly sweet, which compensates for the sweetness of the sugar-lemon glaze that you dip the cookies into at the end. 
  • If you're not going to use the glaze, feel free to increase the amount of Maple syrup to 4-5 tbsp. If you do this, you'll also need to increase the amount of almond flour. Add an additional ¼ cup of flour to the dough. The dough will be sticky, but you'll be able to shape it into a ball.
  • Shaping the dough into a ball. Depending on the size of the banana, you might need to use more almond flour. The dough is supposed to be sticky, but if it's too hard to shape it into a ball, add an additional ¼ cup of almond flour. 
  • Rolling the dough. Freezing the dough for 30 minutes will make it easier to roll out. There's no need to dust a table with flour, but I found that it's easier to roll the dough in between two sheets of parchment paper.
  • Also, use a light touch when rolling the dough. Since it'll probably be slightly sticky, apply a light pressure to a rolling pin.
  • Add-ons.  If you have a sweet tooth, add half a cup of dairy-free chocolate chips to the cookie dough. The melted chocolate adds a delightful sweetness and compliments the almond flavor of the cookies.
  • For a crunchier texture, add a handful of chopped almonds to the dough. The almonds not only add a wonderful crunch but also enhance the overall flavor of the cookies. Just make sure to adjust the almond flour to maintain the dough consistency.
  • Storage. Add the almond cookies to an airtight container and store them at room temperature. They will stay fresh and delicious for up to ten days. 
  • Freezing. If you want to store your cookies for a longer period of time, you can freeze them. Place your cookies in a freezer-safe bag or container, making sure each cookie is separated by a piece of parchment paper to prevent them from sticking together. 
  • They can be stored in the freezer for up to six months. When you're ready to enjoy them, simply take them out and let them thaw at room temperature.
