Enjoy a quick and flavorful vegan fajitas wrap with sautéed peppers, onions, mushrooms, and a blend of spices, served with dairy-free yogurt!

Ingredients
- 1 tablespoon olive oil
- 1 red bell pepper cut into strips
- 1 green bell pepper cut into strips
- 1 red onion sliced
- 5 ounces cremini mushrooms sliced
- 1 red chili small, sliced, seeds removed
- ½ teaspoon salt
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon dried oregano
- 1 lime juiced
- 2 tablespoons fresh coriander finely chopped, plus extra for garnish
- 4 large tortillas
- dairy free yogurt to serve (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sauté peppers, onions and mushrooms until tender and starting to caramelize, for about 6-8 minutes.
- Add chilii, salt and spices, cook for an additional minute until fragrant. Pour in half of the lime juice, chopped coriander and reserve.
- Warm tortillas in the microwave or wrap them in foil and heat in a low oven.
- Serve the wraps with sautéed peppers mixture and dairy-free yogurt, additional coriander, and lime wedges for squeezing, if desired.
Notes
- Spiciness: adjust to your taste, add the red chili seeds for a hotter version.
- Keep the tortillas warm by covering with a tea towel.
