Vegetable Couscous Salad

This Vegetable Couscous Salad is loaded with fresh vegetables and feta cheese, then tossed in a simple lemon garlic vinaigrette. A perfect side dish for family gatherings and holidays!

Salad

  • ¾ c. couscous about 3 c. cooked, uncooked
  • 1 c. asparagus cut into 1 1/2 inch pieces, fresh
  • 1 c. yellow squash sliced and quartered
  • 1 c. grape tomatoes cut in half
  • 2 Tbsp. basil chopped, fresh
  • 6 oz. feta cheese crumbled

Dressing

  • ¼ c. olive oil
  • 2 Tbsp. golden balsamic vinegar
  • 2 Tbsp. lemon juice
  • 2 cloves garlic minced
  • ½ tsp. salt
  • ¼ tsp. black pepper

Instructions

  1. Prepare couscous according to package instructions.
  2. Blanch asparagus and yellow squash by placing in boiling water 2 minutes, then running under cold water.
  3. Combine cooked couscous, blanched vegetables, grape tomatoes, fresh basil, and crumbled feta cheese in a large serving bowl.
  4. Prepare dressing by combining all ingredients in a container with a lid.
  5. Shake vigorously and pour over couscous mixture.
  6. Toss to combine.
