Vegetarian Caprese puff pastry parcels

These super-easy vegetarian Caprese puff pastry parcels are perfect for a quick snack or appetizer.

Ingredients

  • 1 puff pastry pre-rolled, pack
  • mozzarella fresh, large ball
  • 2 tomato large
  • 10 basil large leaves, fresh
  • 1 egg lightly beaten
  • salt freshly ground
  • black pepper freshly ground
  • 3-4 tbsp grated vegetarian Parmesan to sprinkle

Instructions

  1. Preheat your oven to 220C/425F.
  2. Take your puff pastry out of the fridge for 5 minutes and unroll, keeping it on the paper it was rolled in.
  3. Cut into squares – you will get 6-8.
  4. Slice the tomatoes thinly and pat dry with some kitchen paper. Do the same with the mozzarella.
  5. Place a slice of tomato on each square, top with a basil leaf, add a slice of mozzarella and finish with another basil leaf. Season with salt.
  6. Bring the two corners together to form a little parcel and wet the edge with a little egg wash to seal.
  7. Brush the parcel with egg wash and sprinkle with grated cheese and a little pepper.
  8. Bake for around 14 minutes until golden and crisp.
  9. Cool slightly before serving.
