Ingredients

  • ¼ cup caster sugar
  • ¼ cup water
  • 450 g Mango see notes, frozen, chunks, 1 lb
  • cup vodka
  • 2 lime
  • 1 cup ice
  • lime for garnish, slices

Instructions

  1. Place the sugar and water in a small pan and heat gently until the sugar dissolves. Set aside to cool.
  2. Remove the mango chunks from the freezer and leave them to soften slightly (about 5-10 minutes).
  3. Pour the vodka into the food processor, add the mango chunks and then squeeze in the juice from the limes.
  4. Puree until you have a thick smooth slush.
  5. Taste and use the sugar water to sweeten to taste (I add it all!)
  6. Puree once more and then pour into glasses.
  7. Garnish with lime wedges and serve.

Notes

  • Pre-frozen mango chunks can be purchased ready-made or frozen at home by cutting fresh mango into pieces and freezing on a tray before bagging.
  • If using homemade frozen mango, only defrost for about 5 minutes to prevent over-softening, as smaller pieces soften quickly.
