Vodka and Mango Frozen Cocktails
Description
The Vodka and Mango Frozen Cocktail mixes frozen mango chunks with vodka and freshly squeezed lime juice, sweetened by a simple syrup made from caster sugar and water. The mango is slightly softened before blending to achieve a thick, smooth slush consistency. The process ensures a balance of sweet mango flavor with the sharpness of lime and the warmth of vodka. Served with lime wedges, this chilled drink offers a tropical touch and a vibrant citrus finish.
The homemade simple syrup allows control over sweetness, making it easy to adjust the flavor to preference. Using pre-frozen mango chunks saves preparation time, and if freezing fresh mango, minimal defrosting ensures optimal texture.
Ingredients
- ¼ cup caster sugar
- ¼ cup water
- 450 g Mango see notes, frozen, chunks, 1 lb
- ⅔ cup vodka
- 2 lime
- 1 cup ice
- lime for garnish, slices
Instructions
- Place the sugar and water in a small pan and heat gently until the sugar dissolves. Set aside to cool.
- Remove the mango chunks from the freezer and leave them to soften slightly (about 5-10 minutes).
- Pour the vodka into the food processor, add the mango chunks and then squeeze in the juice from the limes.
- Puree until you have a thick smooth slush.
- Taste and use the sugar water to sweeten to taste (I add it all!)
- Puree once more and then pour into glasses.
- Garnish with lime wedges and serve.
Notes
- Pre-frozen mango chunks can be purchased ready-made or frozen at home by cutting fresh mango into pieces and freezing on a tray before bagging.
- If using homemade frozen mango, only defrost for about 5 minutes to prevent over-softening, as smaller pieces soften quickly.
