Watergate Salad
Description
Watergate Salad blends the tangy crushed pineapple and instant pistachio pudding mix first to develop the base flavor. Folding in whipped topping creates a smooth and airy texture, while miniature marshmallows add chewy sweetness and pecans contribute a crunchy contrast. The salad is chilled at least three hours to let flavors meld and the pudding set slightly for a creamy consistency.
The finished salad offers a balance between sweet and slightly tart with varied textures from juicy pineapple, soft whipped topping, and crunchy nuts and marshmallows. It requires no baking or cooking and comes together with minimal effort.
This salad serves as a refreshing addition to meals, particularly during warmer weather or festive occasions. It stores well in the refrigerator, keeping fresh for a couple of days when sealed.
Ingredients
- 1 can pineapple 20 ounces, undrained, crushed
- 2 packages instant pistachio pudding mix 3.4 ounces each
- 16 ounces whipped topping thawed, frozen
- 2 cups miniature marshmallows
- ¾ cup pecans
Instructions
- In a large bowl, stir together the pineapple and pistachio pudding mixes until combined. Use a rubber spatula to fold in the whipped topping until no streaks remain. Fold in marshmallows and pecans. Cover and refrigerate for at least 3 hours before serving.
Notes
- Leftover Watergate Salad can be stored in an airtight container in the refrigerator for up to 2 days.
