Description
Watermelon Balsamic Roasted Berry Popsicles bring together raspberries, strawberries, blueberries, and currants roasted with balsamic vinegar and maple syrup to intensify their juices and flavors. The roasted berries are cooled before blending with watermelon cubes, bananas, and cold orange juice, creating a vibrant fruit mixture. This combination is poured into molds and frozen to form icy popsicles that provide both tart and sweet notes with a smooth texture.
The roasting process concentrates the berry flavors and softens the fruit, which contrasts nicely with the fresh watermelon and banana sweetness. Adding maple syrup allows customization of overall sweetness. The balsamic vinegar adds a subtle acidity that enhances the fruit complexity.
These popsicles are a versatile frozen treat and can be made ahead and stored in the freezer. Paper cups are a simple alternative if molds are unavailable. Adjust tartness with lemon or lime juice or zest as desired, and be sure to leave space in molds to accommodate expansion during freezing.
Ingredients
- 1 lb raspberries mixed
- 1 lb strawberries
- 1 lb blueberries
- 1 lb currants
- 1 tbsp balsamic vinegar
- 2.5 tbsp maple syrup + extra for sweetening if required
- 6 banana peeled
- 1 1/3 cup orange juice 300ml, cold
- 3.5 oz watermelon 100g, peeled, cubed
Instructions
Roast the Strawberries
- Preheat the oven to fan-assisted 180 C / 200 C / 400F / gas 6.
- Mix the berries with the balsamic vinegar and the maple syrup and transfer into a ceramic baking dish. Use a small dish so that the berries roast in their liquid (otherwise the liquid might evaporate and the berries dry out).
- Roast for about 20 minutes, turning half way through, until the juices are bubbling and the berries start to turn darker.
- Then remove the berries from the oven and allow to cool.
Make the Watermelon Popsicles
- When cool, transfer the roasted berries and their juices along with all the other ingredients, including extra maple syrup if desired, into a blender and whizz until well combined.
- Pour into a popsicle mold and freeze for 1 hour.
- Then take out, add in the lolly sticks and freeze until solid.
Notes
- Roast berries and store in the fridge for up to a couple of days to make popsicles whenever desired.
- If you lack popsicle molds, small paper cups (espresso size) work well for freezing individual popsicles.
- Optionally add citrus juice or zest for additional flavor brightness.
- Do not fill molds completely; leave space for expansion during freezing to avoid breaking.
