FOR THE WATERMELON CUCUMBER SALAD:

  • 4 cups seedless watermelon cut into 1" cubes
  • 3-4 mini Persian cucumbers cut into ½" rounds or 1 hothouse cucumber, diced.
  • 4 ounce block feta cheese cut into ¾" dice
  • 2 teaspoons fresh mint leaves chopped

FOR THE HONEY LIME DRESSING:

  • ½ teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

MAKE THE HONEY LIME DRESSING:

  1. In a small prep bowl combine the honey, lime zest and lime juice -- mix until well combined.  Drizzle over the salad and toss to coat.

ASSEMBLE THE WATERMELON SALAD:

  1. Combine the watermelon, cucumber, and feta in a large bowl.
  2. Add the dressing and gently toss to coat. Sprinkle the salad with fresh mint leaves and serve.

Notes

  • This salad is best enjoyed when you make it. Leftovers will keep for one day, well wrapped in the refrigerator.
