Strangely irresistible, this Watermelon Cucumber Salad gets a lift from the honey lime dressing and a sprinkle of Piment D'esplette.

Ingredients
FOR THE WATERMELON CUCUMBER SALAD:
- 4 cups seedless watermelon cut into 1" cubes
- 3-4 mini Persian cucumbers cut into ½" rounds or 1 hothouse cucumber, diced.
- 4 ounce block feta cheese cut into ¾" dice
- 2 teaspoons fresh mint leaves chopped
FOR THE HONEY LIME DRESSING:
- ½ teaspoon lime zest
- 2 tablespoons lime juice
- 1 tablespoon honey
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
MAKE THE HONEY LIME DRESSING:
- In a small prep bowl combine the honey, lime zest and lime juice -- mix until well combined. Drizzle over the salad and toss to coat.
ASSEMBLE THE WATERMELON SALAD:
- Combine the watermelon, cucumber, and feta in a large bowl.
- Add the dressing and gently toss to coat. Sprinkle the salad with fresh mint leaves and serve.
Notes
- This salad is best enjoyed when you make it. Leftovers will keep for one day, well wrapped in the refrigerator.
