Dalgona Coffee (serves 2)

  • 2 tbsp instant coffee
  • 2 tbsp sugar or granulated sweetener
  • 2 tbsp water hot
  • milk to serve, your choice of

Whipped Baileys Coffee (serves 2)

  • 2 tbsp instant coffee
  • 2 tbsp sugar or granulated sweetener
  • 2 tbsp water hot
  • 2 tbsp whisky or rum or bourbon
  • 4 tbsp Baileys Irish cream or to taste
  • ¼ tsp vanilla extract
  • ½ cup skimmed milk or your choice of milk
  • chocolate to serve, grating

Instructions

Dalgona Coffee

  1. Put the coffee granules and sugar in a small deep bowl. Add hot water (from a just boiled kettle) and stir together to combine.
  2. Start whisking on a low speed setting (otherwise the coffee will splatter everywhere). Increase the speed gradually as the coffee foams up and whip on maximum once soft peaks form. Continue until the coffee forms firm peaks a bit like meringue.
  3. Fill a small glass with your choice of hot or cold milk and spoon the coffee over it. Voila! Your Dalgona Coffee is (instagram) ready.

Whipped Baileys Coffee

  1. Make your whipped coffee as above.
  2. Add your choice of cold milk into a mixing jug half filled with ice.Add Whiskey, Rum or Bourbon (we can’t be too picky at a time like this) and Baileys Irish Cream and vanilla extract. Give it a good stir.
  3. Strain into two small glasses over ice filling about ¾ of the way up to allow space for the whipped coffee.
  4. Spoon a generous amount of whipped coffee over the milk.Garnish with a grating of chocolate or a dusting of cinnamon or nutmeg. Enjoy!!

Notes

  • Can I use espresso powder? Nope! You have to use instant (freeze dried) coffee for this recipe to work. I used Nespresso.
  • Can I use sweetener instead of sugar? Yes you can use granulated sweetener, ideally one that is used at the same ratio as granulated sugar.
  • Can I use vegan milk? You can use whatever type of milk you like either hot or cold and served over ice.
  • How do you drink whipped coffee? I used a straw to partially mix the coffee into the milk and then sip slowly. The coffee mousse itself is an intense caffeine hit which needs to be tempered with a bit of the milk.
