Rice

  • 1 ½ cups wild rice blend rinsed, drained, 240 g
  • 3 cups chicken broth 24 ounces / 720 g
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper

Stuffing

  • 5 lices Bacon chopped, thick-cut
  • 1 medium yellow onion diced
  • 2 large carrot peeled and diced
  • 2 ribs celery diced
  • 8 ounces baby bella mushroom sliced
  • 2 teaspoons garlic minced
  • 1 teaspoon sage dried
  • ½ teaspoon thyme dried
  • 1 cup walnuts chopped, 117 g
  • ½ cup dried cranberries 55 g
  • ¼ cup Parmesan Cheese grated, 25 g

Instructions

Rice

  1. To a large saucepan over medium heat, add rice, chicken broth, salt, and pepper. Bring the mixture to a boil. Then, reduce heat to low and simmer, covered, for 40-45 minutes, or until rice is cooked through. Remove from heat. Let steam for 10 minutes.
  2. While the rice is cooking, continue with the recipe.

Stuffing

  1. To a large skillet over medium heat, add bacon. Cook until crispy. Using a slotted spoon, remove the bacon from the pan and transfer it to a paper towel-lined plate. Reserve 2 tablespoons of bacon grease in the pan and discard the rest.
  2. To the grease in the skillet, add onions, carrots, celery, and mushrooms. Stir to combine. Cook until the vegetables are tender, about 8-10 minutes.
  3. Add garlic, sage, and thyme. Cook for 1 more minute.
  4. Turn off the heat. Add the rice, bacon, walnuts, cranberries, and parmesan cheese. Stir to combine.
  5. Serve warm.
