These super easy yogurt parfaits made with peanut butter granola only take 5-minutes to make and are perfect for a busy morning!

Ingredients
- 1/4 cup raspberry chia jam
- 3/4 cup greek yogurt of choice high protein is best
- 1/2 cup Bob's Red Mill Peanut Butter Granola
- 1/4 cup fresh strawberries quartered
- 1 tbsp maple syrup
Instructions
- This is a really simple recipe and it's so fun to eat!
- Start by layering two jars, cups or bowls equally with the jam, then some yoghurt, granola and fresh berries! Enjoy with a drizzling of maple syrup.
Notes
- Chia Jam: 1 package of raspberries, 3 tbsp. chia seeds and tbsp. of honey. Simply add the raspberries to a small pot and cook on low for 10 minutes or until burst. Remove from heat, add the honey and chia seeds. Stir till combined then let it sit till cool. Store in the fridge in a tightly sealed container for up to 2 weeks. NOTE: you can make these with any type of berry, stone fruit, or fruit. 1 cup of fruit per 3 tbsp. of chia seeds is a good benchmark.
- Yogurt: If you are vegan, use whatever yogurt you prefer! Any will work but the thicker the better!
- Berries: You can use any type of fruit in this parfait! Have fun with it! Tip: Add lemon or lime to the fruit to avoid browning or going bad.
- Maple Syrup: Agave, honey, or coconut nectar works great in place of the maple syrup!
- Granola and Prep: If you are meal prepping these, add the granola last as they will get soft and stale if you make them on a Sunday and enjoy them throughout the week. I suggest adding the granola to a separate container and adding it to the parfait before eating.
