Ingredients

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 cup finely diced onion
  • 2 cloves garlic minced
  • 1 pound ground Italian sausage casings removed
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley optional

Instructions

  1. Preheat the oven to 400°F. Coat a large baking dish with cooking spray.
  2. Cut the zucchini in half lengthwise and scoop out the flesh to create boats. Arrange the zucchini halves in the baking dish.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 4 minutes. Add the garlic and cook for another 30 seconds.
  4. Add the sausage to the skillet and cook, breaking it up with a spatula, until no longer pink, about 5 minutes. Stir in the Italian seasoning, salt, and pepper. Pour in the marinara sauce and simmer for 5 minutes longer.
  5. Spoon the sausage mixture evenly into the zucchini halves. Top with shredded mozzarella and grated Parmesan cheese.
  6. Bake for 25 minutes, or until the zucchini is tender and the cheese is melted and golden brown. Sprinkle with chopped parsley, if desired, and serve.
