Zucchini Cheddar Fritters

Zucchini Cheddar Fritters combine shredded zucchini, cheddar cheese, and a batter of flour, bread crumbs, and baking powder bound by eggs. Pan-fried in vegetable oil until golden brown, they develop a crispy exterior and tender interior with a mild savory flavor. These fritters work well as a snack or side dish and can be served with dipping sauces.

Description

This recipe uses grated zucchini mixed with sharp cheddar cheese and beaten eggs to form the main base of the fritters. A dry mix of flour, bread crumbs, baking powder, salt, and pepper is incorporated to provide structure and lightness. The batter is gently combined to avoid overworking and maintain softness within.

Frying dollops of the batter in medium-hot vegetable oil creates fritters with a golden crust and moist center. Cooking time is managed to achieve a crisp exterior without burning or undercooking the interior. Draining on paper towels removes excess oil, and keeping batches warm in an oven ensures all fritters are served hot. These fritters can be accompanied by dips or sauces of choice, enhancing their mild zucchini and cheddar flavors.

Ingredients

Servings
  • 3 egg
  • 1 medium zucchini About 3 cups, shredded
  • 1 c cheddar cheese shredded
  • ¾ c flour
  • ¼ c bread crumbs
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ c vegetable oil for frying

Instructions

  1. In a large bowl, whisk the eggs then add in zucchini and cheese and stir to combine.
  2. In a separate bowl or large measuring cup, mix flour, crumbs, baking powder, salt and pepper well and then pour into zucchini mixture and stir gently just until combined.
  3. Heat oil in a large frying pan on medium.  Once heated, drop batter in by heaping tablespoonfuls.  Let cook until golden brown and then flip. (Turn heat to medium low if they are browning too fast, they should be golden by the time they are cooked half through and ready to flip). Once done, drain on paper towel lined plate or bowl in a warm oven until they are all cooked, 2 or 3 batches. (Makes 12 fritters)
  4. Serve with desired dip.
