Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • 1 large egg room temperature
  • cup vegetable oil
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • ½ cup chopped walnuts optional
  • ¼ cup mini chocolate chips optional

Instructions

  1. Preheat the oven to 350°F. Line muffin wells with paper liners or spray with cooking spray.
  2. Shred the zucchini using the larger side of a box grater.
  3. Combine flour, cinnamon, baking soda, and salt in a medium bowl. Whisk to combine and set aside.
  4. In a separate bowl, combine sugar, egg, oil, milk, and vanilla.
  5. Fold the wet mixture into the dry mixture just until combined (do not over-mix). Fold in walnuts and chocolate chips. Fold in zucchini.
  6. Divide over muffin tins and bake 22-24 minutes or until a toothpick comes out clean.
  7. Remove from the pan and cool on a wire rack.

Notes

  • If the zucchini is very large it may have a thicker tough skin and can be peeled. Larger garden zucchini may have big seeds that can be scraped out with a spoon before shredding.
  • If using frozen shredded zucchini, thaw first and lightly drain. You want to ensure that the zucchini has some moisture to keep the muffins moist.
  • Do not overmix the batter or the muffins won't be tender.
  • A darker muffin pan will cook faster, be sure to check the muffins early to ensure they don't overcook. 
  • Zucchini muffins can be kept at room temperature in a closed container or a zippered bag for up to 5 days. To freeze, wrap them individually in plastic wrap, then in a zippered bag for up to 8 weeks.
