Ingredients

Servings

Avocado Coconut Lime: 6 popsicles

  • 1 ripe avocado, pitted and peeled about 200 grams
  • 1 can coconut cream, full fat, not coconut beverage 13.5 fl ounces/400 ml
  • juice of 2 small limes 2 tablespoons
  • ¼ cup monk fruit sugar or Erythritol, plus 2 tablespoons for a sweeter taste
  • 5 small mint leaves or chocolate mint leaves

Kiwi Basil Lemon: 8 popsicles

  • 2 sweet kiwis about 180 grams, peeled
  • 7 fresh basil leaves
  • 2 ½ tablespoons lemon juice juice of 1 big lemon
  • 1 can coconut milk 13.5 FL oz/400 ml
  • cup monk fruit sugar or Erythritol or Swerve

Coffee-Chocolate Flavored: 6 popsicles

  • 1 can unsweetened heavy whipping cream or whipped cream alternative (you can also use mascarpone cheese or coconut cream) (about 1 ¼ cups) 10oz/283 grams
  • ¼ cup black brewed coffee 55 ml
  • ¼ cup Monk fruit sugar or Erythritol (sugar substitute) 55 grams
  • ¼ teaspoon cinnamon powder
  • 2 teaspoon unsweetened cacao powder
  • 2 tablespoons unsweetened cashew or almond or macadamia milk

Instructions

To Make One of the Popsicle Recipes above:

  1. In a high-speed blender, blend all ingredients until smooth.
  2. Then, prepare a 6 or 8-cavity individual ice pop mold, depending on the recipe.
  3. Fill the ice pop molds, and place a popsicle stick in the center of each mold.
  4. Immediately store in the freezer for at least 2 to 3 hours to set (preferably let it sit overnight)
  5. Only release the individual popsicles from the mold when ready to enjoy one.
  6. Keep in the freezer for up to 1 month.
