Aguapanela or agua de panela, is a popular drink in South and Central America and the Caribbean obtained by diluting panela.

Ingredients
- 6 oz. panela
- 4 cups water
- 1 cassia cinnamon stick form
- 1 tablespoon ginger freshly grated
- lemon optional, juice of a

- 4 cinnamon sticks
Equipment
- Fine mesh strainer
Instructions
- Combine the panela and water in a saucepan over medium heat.
- Stir until the panela is completely dissolved.
- Add the cinnamon stick and grated ginger. Mix well for 15 seconds using a whisk.
- Bring the mixture to a gentle boil, then reduce the heat and simmer for 5 minutes over low heat.
- Remove the pan from the heat and let it cool.
- Add the lemon juice (optional).
- Using a fine mesh strainer, filter the liquid to remove all impurities.
- Pour the aguapanela into a cup or glass.
- Serve hot or cold, and garnish with a cinnamon stick.
