Ingredients
- 1 lb boneless skinless chicken breasts cut into bite-sized pieces
- 1 cup whole wheat breadcrumbs
- ¼ cup grated Parmesan cheese optional
- 1 large egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper

Instructions
- Prepare the Chicken: Cut the chicken breasts into bite-sized pieces and set aside.
- Make the Breading Station: In a shallow bowl, whisk the egg. In another bowl, combine the whole wheat breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, paprika, salt, and pepper.
- Coat the Chicken: Dip each piece of chicken into the egg, allowing any excess to drip off. Then, coat the chicken in the breadcrumb mixture, pressing lightly to ensure it sticks.
- Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Air Fry the Nuggets: Arrange the coated chicken pieces in a single layer in the air fryer basket. Spray lightly with cooking spray or olive oil. Air fry for 8-10 minutes, flipping halfway through, until the nuggets are golden brown and cooked through (internal temperature should reach 165°F or 75°C).
- Serve: Remove the nuggets from the air fryer and let them cool slightly. Serve warm with your favorite dipping sauce, such as homemade honey mustard or a yogurt-based ranch.

- For a gluten-free option, use almond flour or gluten-free breadcrumbs in place of whole wheat breadcrumbs.
