Alambre is a Mexican dish consisting of grilled beef, bacon, peppers, onion, cheese, and avocado, served with corn or flour tortillas.

Ingredients
For the alambre
- 3 lices Bacon , cut into ½ inch (1,5 cm) cubes
- 3 beef steaks , approximately 6 oz / 200 g each, cut into ½ inch (1,5 cm) cubes
- ½ yellow (or red onion, cut into ½ inch (1,5 cm) dice)
- ½ red pepper , cut into ½ inch (1 cm) dice
- ½ green pepper , cut into ½ inch (1 cm) dice
- 6 oz. grated Oaxaca cheese (or other soft cheese)
- salt
- pepper
To serve
- 8 flour tortillas (or 12 corn tortillas)
- hot sauce
- guacamole
- 1 large lime (or lemon, cut into 4)
Instructions
- Heat a large nonstick skillet over medium to high heat.
- When the pan is hot, add the bacon and fry, stirring, until the edges brown.
- Remove the bacon from the pan and discard most of the excess fat. Keep just enough in the pan to cook the meat.
- Return the bacon to the pan and cook with the beef, stirring regularly.
- Season with salt and pepper.
- Add the onion and peppers. Mix well and cook until cooked through but still slightly crunchy, stirring frequently.
- Cook until the liquid released by the peppers and meat evaporates, stirring regularly.
- Once the vegetables are cooked, reduce the temperature to minimum and add the cheese.
- Then cover the pan and wait for the cheese to melt.
- Serve the alambre immediately, accompanied by hot tortillas, lemon, guacamole, and a hot sauce.
Notes
- When not finding Oaxaca cheese, use any other type of pasta filata cheese, such as Mozzarella di Bufala Campana, Muenster, non-aged Monterey Jack, or Manchego.
